Muringayila Mutta Thoran

Muingayila mutta thoran is a healthy and delicious stir fry known well for every malayali. The health benefits of drumstick leaves are enormous. It stabilizes sugar, regularizing cholesterol, and control blood pressure level. More than these benefits it is packed with source of essential amino acids, vitamin A and vitamin C. It goes well with rice.

Ingredients:


Muringayila / Drumstick leaves - 1 1/2 cup (Standard measurement cup)

Egg - 2 Nos

Coconut grated - 1/4

Crushed shallots - 5 Nos

Chilly flakes - 2 1/2 to 3 teaspoon or Green chillies - 6 Non

(you can choose any of these)

Turmeric powder - 1/4 teaspoon

Curry leaves - 1 spring

Coconut oil - 2 tablespoon

Salt to taste


Directions to make:


1. Heat 2 tablespoon of coconut oil in a wide pan and add the crushed shallots and curry leaves. Saure it, till it become transparent and light brown color.

2. Then add chilly flakes or green chillies ( choose any one) and turmeric powder. Saute it till the raw smell goes.

3. Add grated coconut and mix everything together, and fry it for 30 seconds.

4. This is the time to add washed and drained drumstick leaves and sprinkle 2 tablespoon water over it. This will help to retain the moisture in leaves. After that saute and cook the leaves for 2 to 3 minutes.

5. When the drumstick leaves decreased in quantity, add salt (The drumstick leaves will shrink when it sauted, so that salt will be added only after it cooked 90 %).

6. At this stage keep the thoran to the side of the same pan and break two eggs and scramble it. Finally mix it with the stir fried drumstick leaves and saute it for1 minute.

7. Now the healthy, nutritious and delicious drumstick leaves egg sir fry is ready to serve.
