Bhatura (Indian bread)

Bhatura is coming from North - Indian cuisine. It is a deep fried fluffy bread commonly eat with Chola (Chick pea curry). So it is also known as Chola Bhatura. Bhatura is made from maida (all purpose flour), baking powder, oil, yogurt, semolina, sugar and salt.

Ingredients:
All purpose flour - 2 cup( standard measurement cup )
Semolina/Rava - 1 tablespoon
Baking powder - 1/4 teaspoon
Sugar - 1 teaspoon
Yogurt - 2 tablespoon
Vegetable oil - 2 tablespoon
Salt - 3/4 teaspoon
Water for mixing ( Same as for making chappathi dough )
Oil for frying
Directions to make:
1. Take a bowl and put all dry ingredients, all purpose flour/ maida, semolina/ rava, baking powder, sugar and salt. Then add the liquid ingredients, yogurt and oil. Mix everything well with required quantity of water to make a soft and smooth dough. Kneed it well as same as how we make chappathi dough.
2. Cover the bowl with cling film and keep it in a warm place 6 to 8 hours for fermentation.
3. After 6 to 8 hours kneed it again and divide the dough into 10 equal part and roll it to balls. Then flatten these balls with chappathi roller by greasing oil Or by dusting some flour on it (neither too thin nor too thick).
3. Take a kadai and pour enough vegetable oil. When it get sizzling hot, transfer the bhatura into the hot oil (oil must be hot, otherwise the bhatura will become soggy).
4. When one side is light brown in color and fluffy( lightly press with a spoon), flip it to other side. Then transfer the fried bhatura from oil and drain the excess oil by pat dry it on tissue. Repeat this step with the remaining bhaturas.
