Banana Chips or Kaya Varuthathu

Banana chips do not require an introduction before malayali because it is a personal favorite for everyone. The raw banana is deep fried in coconut oil and served with a salty taste. This is very easy to make at home with better taste than buying from shops.

Ingredients:
Raw bananas ( Neneran kaya ) - 3 Nos
Turmeric powder - 1/2 teaspoon
salt to taste
water for mixing salt
coconut oil for frying
Directions to make:
1. Take 3 raw bananas(Nendran), make a long slit on each and remove skin completely.
2. In bowl pour enough water to immerse the banana completely and add 1/2 teaspoon of turmeric powder , allow it to rest for 1 hour.
3. Dissolve 1/2 teaspoon of salt in some water and keep it aside.
4. After 1 hour of time drain the water and pat dry the bananas for frying.
5. Heat enough coconut oil in a wide pan on medium flame.
6. Slice the banana and put only one slice to the oil to check whether the temperature of the oil is correct for frying. If the temperature is correct the slice will pop up faster. Then slice the raw banana with a slicer directly into the hot oil. Fry them till it get crispy. Then add salt with water (keep a distance from pan at this moment ). After the bubbles settles down fry the chips for a few seconds (till it is perfectly crispy) without losing the color.
7. Remove the chips from the oil to a paper towel to absorb the excess oil.
8. Repeat the same process to the remaining bananas. ( No need to add salt again into the oil).
9.When the chips cool completely transfer it to a airtight container.
